Easy Honey-Apple Baked Chicken


This is a family favorite. My daughter requests it regularly. I like to serve this chicken with brown rice, and drizzle both with the sauce. This recipe serves 4-6, depending on the size of your people. 

Ingredients:
8-10 boneless, skinless chicken thighs
a pinch of salt & pepper
1 garlic clove (minced)
1/2 tsp ground ginger
1 cup all natural apple juice
1 & 1/2 tbsp soy sauce
2 tbsp dijon mustard
3 tbsp honey

Preheat the oven to 350. Tenderize chicken as you normally would, and place in a baking dish. Sprinkle with salt & pepper, garlic, and ginger.


Next, whisk together the apple juice, soy sauce, dijon mustard, and honey.


Pour evenly over the chicken. 


Bake for 30-35 minutes. 

Let rest for 10 minutes, and serve with brown rice and your favorite steamed vegetable. Yummy!
