Mama Dixon's Beefy Biscuits


This is one of the kids' favorite meals. We often have it for lunch, but it certainly makes a hearty, kid-friendly dinner too! I created the sauce for sloppy-joes, but I leave out the corn when making those. 

Ingredients:
1 lb. ground beef (as lean as possible)
1 small onion
1/2 cup diced tomato
1/4 cup plus 1 tbsp ketchup
2 tbsp bbq sauce
1 tsp mustard
squirt of lemon juice
splash of white vinegar
1/2 cup corn (fresh, frozen, or canned)
12 of your favorite refrigerated biscuits
shredded cheddar (optional)


Brown the beef with the onion, and drain.


Meanwhile, mix together the diced tomato, ketchup, bbq sauce, mustard, lemon juice, and vinegar.


Add the corn to the beef and onion.


Mix in the tomato mixture, and heat through (about 5 minutes).

Meanwhile, spray muffin pan, and line each cup with a biscuit.


Fill each precooked-biscuit-cup with meat mixture, and bake at 375 for 10-12 minutes. If you'd like a little cheese on top, as my daughter loves, then sprinkle with cheese the last 5 minutes of baking. Yummy!


**Note: You may have a little leftover meat mixture (I usually do). Just store it in an air tight container in the fridge, and plop it on a hamburger bun for your teenager, when he claims to be "starving." That's what I do.
