This is a SUPER quick kid-friendly dinner, that the whole family loves!
1.5 lb lean ground beef
1 medium onion, chopped
2 tbsp chili powder
1/2 tsp garlic powder
1/2 tsp crushed red pepper
1/2 tsp ground oregano
1 tsp paprika
1 tbsp cumin
1 tsp salt
1 tsp ground black pepper
2 cups brown or white instant rice
2 cups water
2 cups shredded mexican blend cheese
2 cups shredded lettuce
2 fresh tomatoes, diced
Brown the beef with the onion, drain, and return to the skillet.
Stir in the spices, water, and rice. Cover and simmer 5-7 minutes.
Stir in the cheese, and let simmer one minute longer. Boom! You're finished.
Serve topped with lettuce and tomato. Yummy!
